This tasty bread with sun-dried tomatoes is just of one the ways I use the sun-dried tomatoes that I dehydrated with my Sun Oven. Purchased sun-dried tomatoes also work if you didn’t get a chance to dehydrate your own last summer.

Ingredients for Bread with Sun-Dried Tomatoes
- Sun-dried tomatoes (ยพ cup). You can use freshly-dried or purchase them from the store.
- Water (1 ยผ cup)
- Milk (whole โ cup)
- Olive oil (3 tbsp)
- White bread flour (5 cups)
- Whole-wheat bread flour (1 cup)
- Freshly grated parmesan cheese (1 cup)
- Salt (2 tsp)
- Granulated sugar (2 tsp)
- Rapid-rise active dry yeast (1 ยฝ tsp).
About rapid-rise yeast: Sometimes this can be hard to find in the local grocery store. If that's the case you can get it from Amazon. With rapid instant dry yeast, you can make a variety of breads and more. It is designed for mixing directly with other dry ingredients. It can be added directly to your recipe as it doesn't need time for proofing like with traditional yeast, and is perfect for the oven or bread machines. Mix directly with other dry ingredients.

About Making the Dough
You will notice that many of my bread recipes used a break maker machine in the process of making the dough. That was the choice of the original writer, who admits she’s not a baker. The bread machine offered the easiest and fastest way to get the dough kneaded and ready to cook.
You, the reader, do not have to use a bread machine. It depends on your bread making skills. You can choose to use a hand mixer, or any other method that you prefer.
Why Not Just Bake it in the Bead Maker Machine?
Because I want to show you how you can use your Sun Oven. Because you don’t NEED to use a bread maker machine to prep your dough. The idea of these recipes is to show you how to bake in your Sun Oven. Plus – you’re not heating up your kitchen this way. And, in a pinch, you can learn to make bread off-grid and without electricity.
Cooking Temperature
This recipe assumes you are heating your Sun Oven to about 300 degrees (give or take). However, if your temperatures are not that high, don't sweat it! Bread can cook at temps as low as 175 to 200 degrees in the Sun Oven. The only thing about that is it'll take longer. Just keep an eye on your bread and watch for it to get golden brown. Give it a tap, and if it sounds firm and hollow, it's done!

Sun Oven Bread with Sun-Dried Tomatoes
Equipment
- 1 Solar Oven
- 1 Bread Maker optional
Ingredients
- 5 cup White bread flour
- 1 cup Whole wheat bread flour
- 1 cup Grated parmesan cheese
- 1 ยผ cup Water
- ยพ cup Sun-dried tomatoes
- โ cup Milk
- 3 tablespoon Olive oil
- 2 teaspoon Salt
- 2 teaspoon Granulated sugar
- 1 ยฝ teaspoon Rapid-rise active dry yeast
Instructions
- Put the sun-dried tomatoes in small bowl with enough water to just cover them. Let soak 15 minutes. Drain over a measuring cup to reserve the water. Finely chop the tomatoes. Set aside.
- If needed, add water to the measuring cup to reach the 1 ยผ cups called for. Pour the water, milk, and oil into the bread machine pan.
- Cover the liquid with the flours. Sprinkle the cheese over the flour. Add the sugar and salt in separate corners of the pan. Make a shallow indentation in the center of the flour and add the yeast.
- Set the bread machine to the dough setting. Press start. Add the sun-dried tomatoes at the beep or during the last minutes of kneading.
- At the end of the cycle turn the dough out onto a lightly floured surface and gently punch down. Cut the dough in half and shape it into two loaves.
- Put the dough in two lightly oiled bread pans. Cover the pans with oiled plastic wrap. Let the loaves rise in a warm spot 30 to 45 minutes.
- Set the Sun Oven out to preheat while the loaves are rising. Bake in the Sun Oven until the bread is lightly browned and sounds hollow when tapped, 45 minutes to 1 hour.
