Individual Sun Oven Peach Cobblers

If you don’t have metal mugs or ramekins you can use an 8-x-8-inch baking dish for this cobbler but individual servings are a lot more fun.

Ingredients

For the filling

  • 4 peaches cut into thin wedges
  • ¼ cup sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch

For the topping

  • 1 cup Kodiak Cakes Power Cakes Flapjack and Waffle Mix
  • ½ cup milk
  • cup sugar
  • ¼ cup butter

Instructions

  • Set Sun Oven out to preheat. Spay four metal mugs or ramekins with cooking spray. If you want to use an 8x8 baking pan instead, that's okay.
  • Peel, pit, and slice the peaches into even wedges.
  • In a medium bowl toss the peaches with the sugar, lemon juice, and cornstarch. Divide evenly among the prepared mugs.
  • Set the mugs on a rimmed baking pan and cover with a baking sheet or other type of non-reflective lid. Cook peaches in the Sun Oven until beginning to soften, 15 to 20 minutes. Prepare the topping while the peaches are cooking.
  • Whisk together the baking mix and sugar in a medium bowl. Blend in the butter with your fingertips until mixture resembles a coarse meal. Stir in the milk.
  • Remove peaches from the Sun Oven after the first 15-20 minutes or so. Spoon the topping over the peaches.
  • Return cobblers to the Sun Oven, uncovered, and continue baking until topping is golden, about 30 minutes.
