Individual Sun Oven Peach Cobblers
If you don’t have metal mugs or ramekins you can use an 8-x-8-inch baking dish for this cobbler but individual servings are a lot more fun.

For the filling
- 4 peaches cut into thin wedges
- ¼ cup sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon cornstarch
For the topping
- 1 cup Kodiak Cakes Power Cakes Flapjack and Waffle Mix
- ½ cup milk
- ⅓ cup sugar
- ¼ cup butter
Set Sun Oven out to preheat. Spay four metal mugs or ramekins with cooking spray. If you want to use an 8x8 baking pan instead, that's okay.
Peel, pit, and slice the peaches into even wedges.
In a medium bowl toss the peaches with the sugar, lemon juice, and cornstarch. Divide evenly among the prepared mugs.
Set the mugs on a rimmed baking pan and cover with a baking sheet or other type of non-reflective lid. Cook peaches in the Sun Oven until beginning to soften, 15 to 20 minutes. Prepare the topping while the peaches are cooking.
Whisk together the baking mix and sugar in a medium bowl. Blend in the butter with your fingertips until mixture resembles a coarse meal. Stir in the milk.
Remove peaches from the Sun Oven after the first 15-20 minutes or so. Spoon the topping over the peaches.
Return cobblers to the Sun Oven, uncovered, and continue baking until topping is golden, about 30 minutes.
