There is something a little more fun about getting your own personal peach cobbler. These Individual Sun Oven Peach Cobblers combine fresh peaches with a simple, lightly sweetened cobbler topping and bake completely outdoors using the power of the sun.

I make these in individual metal mugs or ramekins, which work especially well in a solar oven because the smaller portions heat through relatively quickly. Don't have individual baking dishes? No problem. You can make the same recipe in an 8x8-inch baking dish instead.
What Are Individual Peach Cobblers?
Peach cobbler is one of those desserts that's hard to complicate: juicy peaches on the bottom and a soft, golden topping baked over them.
For this solar version, the peaches are tossed with sugar, lemon juice, and a little cornstarch. The cornstarch helps thicken the peach juices as they cook, while the lemon juice adds just enough acidity to balance the sweetness.

I give the peaches a head start in the Sun Oven before adding the topping. This allows them to begin softening and releasing their juices without overcooking the cobbler topping.
Once the topping goes on, the individual cobblers go back into the solar oven uncovered until the tops are cooked through and golden.
Using Kodiak Cakes for the Cobbler Topping
Instead of starting with regular flour, baking powder, and other dry ingredients, this recipe uses Kodiak Cakes Power Cakes Flapjack & Waffle Mix as the base for the cobbler topping.

It's a convenient shortcut because much of what you need for a quick batter is already in the mix. For this cobbler, I combine it with sugar, butter, and milk to create a thick topping that can be spooned right over the warm peaches.

Butter: Butter adds richness and helps give the topping its cobbler-like texture.
Milk: Milk brings the topping together into a thick batter that can be spooned over the fruit. I suggest whole milk, but 2% would work too. Avoid almond milk, oat milk, etc.
Solar Cooking Tips
Solar oven temperatures naturally vary with the weather, season, and position of the sun, so use the cooking times as a guideline rather than a strict deadline.
Try to start with a well-preheated solar oven. Also, cut the peaches into evenly sized wedges so you don't wind up with some pieces soft while others are still firm.
After adding the topping, cook the cobblers uncovered. This gives moisture a chance to escape and helps the topping brown rather than simply steam.
And remember that every time you open your solar oven, you lose some heat. Check the cobblers when necessary, but resist the temptation to keep opening the oven to see how they're doing.

Substitutions and Variations
No metal mugs or ramekins? Use an 8x8-inch baking dish and make one family-style peach cobbler instead.
Peaches: You could use nectarines or a combination of peaches and nectarines. Other soft summer fruits such as berries can also be mixed in with the peaches.
Milk: Regular dairy milk works well, but an unsweetened nondairy milk should also work if that's what you normally keep on hand.
Kodiak Mix: Another complete pancake or baking mix may work, but the texture and sweetness can vary considerably from brand to brand. Because this recipe was developed using Kodiak Power Cakes, that's the mix I recommend for the most predictable results.

Ingredients
For the filling
- 4 peaches cut into thin wedges
- ¼ cup sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon cornstarch
For the topping
- 1 cup Kodiak Cakes Power Cakes Flapjack and Waffle Mix
- ½ cup milk
- ⅓ cup sugar
- ¼ cup butter
Instructions
- Set Sun Oven out to preheat. Spay four metal mugs or ramekins with cooking spray. If you want to use an 8x8 baking pan instead, that's okay.
- Peel, pit, and slice the peaches into even wedges.
- In a medium bowl toss the peaches with the sugar, lemon juice, and cornstarch. Divide evenly among the prepared mugs.
- Set the mugs on a rimmed baking pan and cover with a baking sheet or other type of non-reflective lid. Cook peaches in the Sun Oven until beginning to soften, 15 to 20 minutes. Prepare the topping while the peaches are cooking.
- Whisk together the baking mix and sugar in a medium bowl. Blend in the butter with your fingertips until mixture resembles a coarse meal. Stir in the milk.
- Remove peaches from the Sun Oven after the first 15-20 minutes or so. Spoon the topping over the peaches.
- Return cobblers to the Sun Oven, uncovered, and continue baking until topping is golden, about 30 minutes.
