Solar Baked Huevos Rancheros in the Sun Oven

How to Make Huevos Rancheros in the Solar Oven

Huevos rancheros from the SO make an easy to prepare, attractive breakfast or lunch.
1. Set Sun Oven out to preheat


2. Spray a six cup muffin pan with cooking spray.


3. Soften the tortillas one at a time by covering them with a paper towel and heating in the microwave for 10 to 20 seconds each.


4. Place one corn tortilla in each muffin cup. Divide the beans among the cups and make a well in the middle of each one.


5. Crack one egg into each well. Sprinkle with salt and pepper.


6. Bake in SO approx. 30 minutes.


7. About 1 minute before eggs are cooked sprinkle cheese on each egg, continue cooking
until cheese melts.


8. Carefully transfer huevos to plates. Top with green or red salsa.


9. Serve 1 to 2 huevos per person.

Ingredients
  

  • 6 Small corn tortillas
  • 16 oz Refried beans
  • 6 Eggs room temperature
  • ½ cup Shredded cheddar cheese
  • Green or red salsa to taste

Instructions
 

  • Set Sun Oven out to preheat. Spray a six cup muffin pan with cooking spray.

    Good in theory but oven not hot at breakfast time.

      With a Sun Oven, it doesn't need to be hot out - you just need the direct sun. You might need to tweak cooking time one way or another depending on your location and season, but you can definitely cook some eggs as long as you have direct sun!
